How are the documentary videos taken in Animal Planet so close of hunting animals,etc?

I want to know what kind of camera shooting is involved to take animals for example,hunting at night,or cheetah hunting,That too over such long periods of time,without the animals noticing.How are the documentary videos taken in Animal Planet so close of hunting animals,etc?
